Holiday Treats from Always the Children

The holiday season is a wonderful time to show appreciation for those around you. We love to say "thanks" with yummy treats. This season Paula shares a favourite recipe to share with family, friends, co-workers, etc. Have a very sweet holiday!

Paula's Pumpkin Cake
Ingredients
3 C. flour
2 tsp baking powder, 2 tsp baking soda
1 T. ground cinnamon, 1/4 tsp ground cloves
1/2 tsp ground ginger, 1/4 tsp nutmeg, 1 tsp salt
2 C pumpkin (or 1 can), 1 1/4 C Vegetable Oil
4 eggs, 2 C. sugar (for wet portion)
Optional: 5 oz. raisins and/or 3 oz. chopped walnuts



Mix dry ingredients in bowl
Beat together pumpkin, sugar and oil
Add eggs to pumpkin mix, beating in 1 at a time
Fold pumpkin mix into dry ingredients, blend well
Add raisins/nuts, if desired
Pour mixture into well greased 10" tube pan
Hit pan on counter to level mixture
Bake at 350 degrees for 65 minutes
or until firm, moved away from sides of pan
Cool on counter 10 minutes
Remove from pan, allow to cool completely
Cut horizontally to make 3 layers and frost

Frosting
Beat together 1-8 oz. package of cream cheese, 2 oz. butter, 1 tsp vanilla, 16 oz. confectioners sugar
Add whole milk to thin, no more than 2 T
May add raisins or nuts to frosting as well
